With Josh disappeared, the witch was able to effectively use him as both a means to terrify and lure Mike and Heather deeper into madness and into her realm. I believe Mary Brown saw Josh's apparition, toothless, drenched with water and terribly suffering, because that is what happens to the witch's victims.
In stark contrast to the original film, you do see monsters in Terminal Reality’s The Blair Witch Vol I: Rustin Parr. You see plenty in the first 10 minutes. You’re attacked by skinless zombies. Then three were-bats lunge at you. Some reptilian ghouls pop out here and there.
